We Do Not Choose Eggs at Room Temperature for Frying

Most of us think the egg’s temperature doesn’t matter before frying it. No doubt it’s possible to get a good scramble fresh from the fridge, but according to Chef Robert Irvine, it might not be correct. Letting the egg sit at room temperature for four to five minutes is recommended.

If cooked cold, an egg can result in a runny scramble, and it is possible that it would not be thoroughly cooked either because a cold egg white takes longer to reach a stiff peak.
